That’s why this summer, we’re leaning into appetizer parties—our favorite way to entertain with ease. No hours behind the stove while everyone waits on you alone in the kitchen. No hot oven heating up the house. Just flavorful, make-ahead bites, a few chilled bottles of wine or spritzers, and a sunset that does half the decorating work for you.

Today, we’re sharing two of our absolute favorite summer appetizer recipes—designed for prep-ahead ease, zero cooking at party time, and full of flavor and flair. So pour a glass, kick off your sandals, and get inspired to entertain a little more simply this season.

Appetizer #1: Steak & Pear Stacks with Feta, Walnuts & Red Wine Reduction

  • Salt & black pepper, to taste
  • Optional: arugula or baby greens for plating

Instructions

Step 1: Make the Red Wine Balsamic Reduction
In a saucepan over medium heat, combine red wine, balsamic vinegar, and powdered sugar.
Bring to a gentle boil, then reduce to a simmer.
Stir occasionally and simmer for 25–35 minutes, or until thickened and syrupy.
Let cool. It will thicken more as it rests.

Step 2: Cook the Steak
Season tenderloin with salt and pepper.
Sear in a hot cast iron skillet with olive oil, about 3–4 minutes per side for medium-rare.
Rest for 5 minutes, then thinly slice against the grain.

Step 3: Assemble the Stacks
On a serving platter or appetizer plates, layer:

  • A slice or two of pear
  • A slice or two of steak
  • A crumble of feta
  • A sprinkle of walnuts

Drizzle generously with red wine reduction.
Optional: Serve over baby arugula for a peppery base.

Ingredients (Makes 24 bites / Serves 8–10)

  • 12 large dried figs, stems trimmed and split
  • 12 large Medjool dates, pitted
  • ½ cup mascarpone cheese, room temp
  • 20 mandarin orange slices (fresh or canned, drained)
  • ½ cup shelled pistachios, chopped
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

Step 1: Stuff the Figs & Dates
Use a spoon or piping bag to fill each fig and date with mascarpone.
Close gently so the filling peeks out.

Step 2: Slide in that Mandarin
Nestle a mandarin orange segment in between the figs and dates.
Extra slices? Use them to decorate the platter!

Step 3: Drizzle & Decorate
Warm the caramel slightly if needed, then drizzle generously over the whole platter.
Finish with chopped pistachios for color and crunch.


Serving Notes

  • Serve these at room temp so the mascarpone is creamy and soft.
  • Add orange zest to the cheese or a splash of Grand Marnier to the caramel for extra citrus depth.
  • Bonus points: these pair beautifully with Prosecco, Moscato, or a floral rosé.
